I am loving buffalo sauce anything lately. I’ve already shared my new-found love for buffalo sauce in this awesome Buffalo Turkey Burger recipe, but it doesn’t hurt to share again. It’s great for cooking with or adding to salads as dressing. Lately, it’s been my go-to for my weekly chicken meal prep, rather than plain, slow cooker shredded chicken.
I didn’t always like spicy foods. I’m not going to lie, I think flexible dieting (and removing a lot of oils and sauces from my diet) led me down the path adding spice to my dishes. In addition to buffalo sauce, I add sriracha to most of my stir fries and rice bowls, and love the Tabasco chipotle sauce on my burrito bowl at Chipotle. Part of me even feels the need to buy some of First We Feat’s Hot Ones sauces. If you haven’t yet discovered the awesomeness of Hot Ones on YouTube, you’re missing out.
Anyways, summer is here so I need to switch up my meal preps. Make lunch more interesting and filling. This buffalo chicken recipe spices up any meal prep I put together. Don’t limit this to only your meal preps though – this would be great for a summer party or family dinner.
Oven Baked Buffalo Chicken
What You’ll Need
- 14 ounces chicken breasts, cubed
- Salt
- Pepper
- 1/3 C. Red Hot’s Buffalo Wing Sauce
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- Sprinkle of Parmesan cheese – I use good ole grated Kraft
- Parsley
Preheat the oven to 425 degrees. Line a baking sheet with aluminum foil and non-stick spray for easy clean up. Set aside.
Prep the chicken by cubing with a sharp knife and place into a glass bowl. Season lightly with salt and pepper. Add half of the buffalo sauce onto the raw chicken and stir together making sure all of the chicken is covered. Spread the chicken onto the baking sheet and bake for about 12 minutes, or until internal temperature of the chicken is 165 degrees. While the chicken is cooking, clean the glass bowl.
While the chicken is still hot, place it back into the now clean glass bowl. Sprinkle on the garlic and onion powder and mix together. Pour over the remaining buffalo sauce to evenly coat the chicken – mix again. Finally, sprinkle on a small amount of Parmesan cheese and the parsley. Stir to evenly combine. The Parmesan cheese will melt and coat the chicken, locking in the buffalo sauce.
Now it’s time to assemble When I pack my lunches for the week, I like to log the meals into MyFitnessPal in advance so I know how much protein to add to each container. Here’s a few things you can add to the buffalo chicken to make it a meal prep:
- Buffalo Chicken Bowl – cauliflower rice, corn, black beans, lettuce, mozzarella cheese, jalapenos (high volume food and more spice)
- Basic Meal Prep – mixed vegetables and cauliflower rice or jasmine Rice
- Oven Roasted Potatoes and Broccoli
- Cilantro lime cauliflower rice and a melty cheese wedge (try Laughing Cow, microwave, and stir everything together)
