Now that we’re in the heat of summer, I’ve been craving iced coffee which I’ve been making at home with some added protein! Because I’m pregnant, I’m trying to keep my caffeine intake around 100mg/day which is about one cup of drip coffee made at home. I’m avoiding lattes and iced coffees from coffee shops (though I treat myself to one every few weeks or so) for the time being, but that doesn’t mean I shouldn’t get to enjoy a homemade iced coffee. This recipe is super simple and affordable – which I love! I can make one cup each morning so it’s fresh. Plus it really hits the spot…

easy chicken sweet potato bowl + sauteed kale
I was going to call this recipe an Easy Buddha Bowl with Sauteed Kale. But I discovered a Buddha Bowl is meant to be made with a vegetarian protein source. Now, I’m not against a hearty, vegetarian dish, but there were no beans in my pantry when I first this recipe. Instead, I used leftover turkey from Christmas and chicken from my meal prep to build my bowl. So a lean protein source with some hearty root veggies and sauteed kale, brings me to this easy chicken sweet potato bowl with sauteed kale. After indulging in sweets and not-so-good-for-you foods during the holidays, I was craving something simple and healthy.…

Easy Macro-Friendly Cauliflower Mash
The holidays are upon us which brings a lot of delicious foods! For me, the holidays begin at Halloween with too much candy and then it goes into Thanksgiving – the holiday where all you do is eat. The majority of these foods you find yourself surrounded by at holiday parties and get-togethers, usually aren’t very macro-friendly or the healthiest. If you’re anything like me, then you prefer having some options that are slightly healthier than your traditional green bean casserole and sweet potatoes with marshmallows. That’s where this easy, macro-friendly mashed cauliflower recipe steps in! Now even I’ll admit that the holidays aren’t about eating healthy foods, but rather enjoying…

Protein Packed Oatmeal
If you’ve been following me on Instagram, you’ll know that one of my favorite evening treat is a big bowl of protein packed oatmeal. Yes, I eat my oatmeal for dessert. If I can swing it, I’ll have oatmeal as my preworkout and again in the evening. Even in the summer months. I’m going to go out on a limb here, but I think dessert oats are superior than the traditional morning oats. Easily. Agree or disagree? Having a higher carb meal before bed may sound scary if you’re new to tracking macros or calories. I know that I feared eating carbs after dark growing up and in my early 20s.…

Oven Baked Buffalo Chicken
I am loving buffalo sauce anything lately. I’ve already shared my new-found love for buffalo sauce in this awesome Buffalo Turkey Burger recipe, but it doesn’t hurt to share again. It’s great for cooking with or adding to salads as dressing. Lately, it’s been my go-to for my weekly chicken meal prep, rather than plain, slow cooker shredded chicken. I didn’t always like spicy foods. I’m not going to lie, I think flexible dieting (and removing a lot of oils and sauces from my diet) led me down the path adding spice to my dishes. In addition to buffalo sauce, I add sriracha to most of my stir fries and…
